Best Granola

I find that most store-bought granolas are too sweet for me, especially when I want granola for breakfast. I love this recipe because it’s not too sweet and has my favorite nut- pecans! Feel free to exchange the pecans for walnuts or the pumpkin seeds for a different seed variety. If you want to add dried fruit to the granola, mix it in when you serve it, otherwise the moisture from the fruit will make the granola soft.

Ingredients

2 3/4 cups rolled oats

1 cup unsweetened coconut flakes

1 cup pecans (or another nut you like)

1/3 cup pumpkin seeds

1/2 tsp salt

1/4 cup maple syrup

1/4 cup oil (I use avocado or canola, but olive is good too)

2 tsp ground cinnamon

Optional: 3/4 cup dried fruit (I like dried cherries or chopped apricots)

Directions

Preheat oven to 300 degrees.

Toss the oats, coconut, nuts, pumpkin seeds, cinnamon, and salt in a large bowl. Mix in the maple syrup and oil until the oats are evenly coated.

Spread the granola on a lined baking sheet. Bake for 20-25 minutes until lightly browned. If desired, toss with dried fruit when serving.
