Fattoush

Fattoush is a delicious Levantine salad that was created to use up pita scraps. It has a tangy, zesty dressing thanks to ground sumac. Sumac is a berry that, when dried and ground, has a tangy flavor similar to lemon. Fattoush usually consists of lettuce, tomatoes, cucumbers, mint, parsley, and toasted pita. This salad is super healthy and easy to make if you are in need of a quick side salad for your dinner. This can also be easily made into a meal by adding some protein, like grilled chicken or tofu. Fattoush is traditionally made with purslane, so if you have that I recommend using it!

The salad in the photos doesn’t have cucumber or mint because unfortunately I don’t have any right now! (It was still great without them).

Serves 4 as a side salad

Ingredients

1 heaping cup coarsely chopped tomatoes

4-5 cups chopped lettuce

2 pitas

1/2 cup Italian flat leaf parsley, finely chopped

1/4 cup mint, finely chopped

1 cup coarsely chopped cucumbers

1 tbsp ground sumac

1 garlic clove, minced

1/4 tsp salt

1/4 cup lemon juice

1/4 cup olive oil

Directions

For the dressing: In a sealable container, combine sumac, salt, lemon juice, garlic, and olive oil. Shake until combined.

For the toasted pita: Open up the pita and tear it open so that there are two thin, circular rounds. Tear the pita halves into irregular 1-2 inch pieces. Toast them until they are crispy and slightly browned.

For the salad: Combine lettuce, tomato, cucumber, mint, parsley, and pita. Toss with dressing and wait a few minutes.
